I vaguely recall my organic chemistry.
Hydrocarbons tend to be volatile oils and gases which are refined into petrol, aviation fuel, et c. These do burn and our entire economy is based on them.
Perhaps the author was thinking of carbohydrates, which are more stable and less volatile?
