Pig's ear soup

Another of those inscrutable Agatean native dishes, but unlike other items of national cuisine, such as the Dish of Glistening Brown Stuff, the Dish of Glistening Crunchy Orange Stuff or the Dish of Soft White Lumps, it has yet to make its way to Agatean cuisine as known in Ankh-Morpork. In fact, as Cohen pointed out, this is a necessity, forced upon the typical Agatean coolie when all the other more interesting bits of the pig have been porked by all the social strata ranking above "peasant", and all you have left to feed a family with are the leftover unappetising bits.
